How to prepare a fresh homemade lasagna from scratch

This recipe is fun and easy to make. Below you will find the ingredients and directions needed.

Pasta dough ingredients:
  • 5 whole eggs
  • 500 g white flour
Bolognaise sauce recipe
Bolognaise Sauce:
  • 750 g minced beef
  • 80 g Olive oil
  • 15 g celery (optional)
  • 100 g finely chopped carrots
  • 30 g finely chopped garlic
  • 100 g finely chopped onions
  • 85 g tomato paste
  • 450 g peeled tomato purée
  • 8 g rock salt
  • pinch white pepper
  • pinch grounded nutmeg
Bechamel sauce recipe
Béchamel Sauce
  • 120 g Butter
  • 120 g all-purpose flour
  • 1.5 L liquid milk or (1.5 L water and 180 g milk powder)
  • 8 g fine salt
  • white pepper to taste
  • pinch of nutmeg
1 cup shredded Mozzarella (optional) 1/2 cup grated Parmesan (optional) Directions

Bolognaise sauce recipe
  1. Preheat a cooking pan.
  2. Pour olive oil and add the onions, garlic and then carrots.
  3. Stir until lightly golden. Add the minced beef.
  4. When the outside of the meat turns brown, use a whisk to break the minced beef and stir well.
  5. Once the beef is cooked and dry, sprinkle with oregano and flour.
  6. Then add the tomato paste and tomato sauce and cook for 15 minutes on low heat.

Béchamel Sauce
  1. In a preheated casserole, melt the butter, then add the flour and mix well until it forms a combined mixture.
  2. Add the liquid milk and spices and stir well using a whisk until it thickens.
Lasagna casserole:
  1. Once you prepare the pasta dough and let it rest for 1 hour, knead it using a pasta machine and cut large lasagna sheets.
  2. Boil water in a casserole, and prepare a bowl full of cold water.
  3. Add a pinch of salt to the boiled water.
  4. Drop the fresh lasagna in the boiled water for only 2 minutes then directly dip them in the cold water for 1 minute.
  5. Drain on a tray.
  6. In a lasagna casserole dish, put a layer of béchamel sauce, a layer of lasagna sheets, a layer of bolognaise sauce, a sprinkle of cheese then another layer of lasagna sheets.
  7. Repeat until the dish is full, then top with Béchamel sauce and sprinkle with cheese.
  8. Bake in a preheated oven
  9. Serve hot!
